The weather is so hot, let's make ice cream! Let's find what we have left in the fridge, so let's make coconut milk ice cream for the kids :)
1. Place thick coconut milk into a big bowl, then add salt, sugar, corn starch and vanilla extract. Mix all very well together.
2. Transfer into a pot and heat on low heat until it's hot but not boiling (keep stirring the milk), then turn off the heat and keep stirring until it has cooled down to room temperature. Then transfer the liquid into a container suitable for the freezer, close it with a lid and keep in the freezer for about 4 to 5 hours.
3. Take the container out, scoop the ice cream and blend it until it becomes smooth, then transfer it back into the container, close it again with the lid and keep in the freezer for about 5 to 6 hours more.
4. Ready to scoop and enjoy :)
