Today i am cooking a quick lunch. It's really delicious and easy to make. That is stir-fried pork red curry :)
1. Stir fry the red curry paste with oil using low-medium heat until it brings aroma. Add the pork and stir fry until it's cooked, then add the egg plants and cook a bit more.
2. Add Paris mushrooms and wood ear mushrooms. Following with all seasoning, stir fry until the eggplants and mushrooms are cooked. And adjust the taste.
3. Add Thai basil, stir a bit and turn off the heat. Serve with Jasmine steamed rice. Zap!
