This dipping sauce is super easy to make and super good for being side dish in Lao meal. It can go very well with grilled fish, grilled meat, steamed or fresh vegetable or just hot sticky rice is enough.
1. Roast chili, garlic, and red shallots on the charcoal. Peel the garlic and red shallots.
2. Add everything in a mortar, with also salt and MSG. Then use a pestle to pound everything together. Transfer to a small bowl. Serve with sticky rice and other food :)
