1. Sprinkle the salt over the catfish, bring to grill until golden brown.
2. Remove the bones and take only the fish meat, then put it to a mortar and use the pestle to pound it until it becomes a paste. Then bring to deep fry in hot oil until golden brown. Leave it cool down on a plate.
3. Prepare the salad dressing: use a bowl, squeeze the lime, add sugar, fish sauce, and a pinch of salt. Mix to dissolve the sugar and salt. After that, add the fresh chili, red shallots, and shredded green mango. Mix together.
4. Pour the dressing on the plate of crispy catfish, add topping with the roasted peanuts and coriander. Serve with cold beer! Zap!
