This dish of mackerel in tomato sauce is like emergency food, we usually eat it at the end of the month when we broke. Instead of eating it the regular way, this recipe makes it more delicious :)
1. Heat oil in a pan, add red shallots, garlic, chili and stir until they are all light brown.
2. Take out the mackerel and tomato sauce from the can and pour them into the pan. Let the sauce reduce a bit .
3. Add sugar and fish sauce and stir quickly. Then taste the dish and adjust athe seasoning if needed.
4. Add the topping with green onions, coriander and chili powder. Serve with hot steamed Jasmine rice. Zap!
